Teriyaki Pork Tenderloin
4 Cloves of garlic (more or less depending on how strong you want that fire garlic breath to be ;))
2 bundles of asparagus/ small bag of fresh green beans
3 or 4 scallions
1 small piece of ginger
2 tbls Hoison sauce
4 tbls soy sauce
1 dollup of honey…Yummy!
1.5 cup rice
Cornstarch (just enough to coat the pork)
Salt and pepper (to taste)
Pork Tenderloin (cut into strips)
In two separate pots, bring 1½ cups water (each) and a pinch of salt to a boil.
Peel and mince ginger.
Cut bottom ends from asparagus, then cut into pieces.
Trim and slice scallions, keeping greens and whites separate.
Add Rice to boiling water and cook as soft as you like it.
Add Asparagus to other pot and cook for a few minutes (until tender with a fork) and drain. Put into ice water.
Mix together soy sauce, hoison, and honey in a small bowl.
Heat small amount of oil in pan.
Season pork with salt and pepper, then toss in cornstarch to coat.
Brown pork in pan and set aside.
Heat oil in same pan over medium heat and add garlic, ginger, and scallion whites and let simmer for 8-10 minutes. Add sauce, asparagus, and pork. Let mixture cook until pork is cooked fully.
Garnish with greens of scallions.
